Soft cake with plums and crumble topping
Today we have a recipe for you including a seasonal fruit: a soft cake with plums and crumble topping!
Ingredients
For the dough:
- 250 g of flour (with your Salzburg grain mill you always have freshly ground flour available)
- 1 pack of baking soda
- 120 g of cane sugar
- 1 pack of vanilla sugar
- 120 g margarine
- 200 g of soy drink
- 1 pack of custard powder
For the crumble:
- 100 g of flour
- 30 grams of freshly flaked oatmeal (Do you already know our new master flaker?)
- 50 g of cane sugar
- 70 g margarine
- optional: cinnamon
- 500 g plums
Preparation
First of all, you wash, pit and cut the plums into slices. Prepare a baking tray or baking pan that is about 20×30 cm in size and grease it with margarine or oil. The oven should be preheated to 180 °C.
For the crumble you melt the margarine. Put the remaining ingredients in a bowl and add the margarine. You can use a fork or simply “crumble” the mass by hand. For now you can put the crumble aside.
For the dough, melt the margarine. In a bowl stir the soy drink with the custard powder and slowly stir in the melted margarine. In another bowl mix the remaining (dry) ingredients.
Now add the dry ingredients to the liquid ones and stir everything to a smooth dough. Put the dough in the baking tray or baking pan and cover it with the plums. Then spread the crumble on the dough with the plums.
The soft cake with plums and crumble topping should be baked in the oven for about 30 minutes.
